はじめに、「宣姓大宗 新垣(筑登之)親雲上淑規口上書」に見る庖丁人、庖丁人の職歴と職制。 新垣(筑登之)親雲上淑規は沖縄の伝統的な菓子を広めた人物である。その史料を紹介しつつ、近世琉球における庖丁人(料理人)の身分・職制などについて考察している。
