はじめに、地域の有力商品としての米穀(地主を核とする米穀流通、村方の米消費―買って食べる米―)、百姓の食と生業選択(文政年間の百姓の暮らしの豊かさ、食の質の向上、百姓の生業選択、天明飢饉の記憶の再生と食の用心)、繰り返される食の変化(天保飢饉の中の食糧事情、再び顕在化する百姓の奢侈、米作への回帰)、おわりに。
